摘  要:用生姜为原料,经连续渗漉抽提的油树脂为心材,以食用胶为壁材,经均质、乳化、喷雾干燥获得生姜油树脂微胶囊,对其主要技术参数测定结果表明:含水率为3.81%,心材包埋率为96.76%,收得率为92.1%。姜油酮含量为1.7285%(WW)。溶剂残留量为4.5ppm。研究中用日立S-450扫描电镜研究了微胶囊的外形结构,未发现微胶囊破裂情况,在姜油酮检测中,用电位滴定法发展和完善了羟胺法。Microencapsulation process of ginger oleoresin which was extracted as core-material from fresh ginger with a 95% ethanol solution was investigated, including emulsion, homogenization and spray-drying. The edible gums were selected as wall-material. The moisture content in microencapsu-lation , recovery of ginger oleoresin microencapsulation and retention ratio of core-material were 3. 81% ,92. 1% and 96. 67% respectively. The zingerone content in the ginger oleoresin microencapsulation was 1. 7285%(W/W). The remmant of solvent was 4. 5 ppm.The microstructure of microencapsulation was investigated with an S-450 scanning electron microscope, cracked particle which was reported by R. Zilberboim was not discovered. The hydroxylamine method which was developed by Bennett &. Salamon for determination of acetyl was improved with electric potential titration.
