摘 要:选取19种氨基酸与牛乳复合培养嗜热链球菌,结果表明:谷氨酸、甘氨酸、丝氨酸、脯氨酸与牛乳复合时对嗜热链球菌促生长作用明显,活菌数分别为:3.80×109、2.60×109、2.50×109、2.10×109cfu/mL,对照为7.20×108cfu/mL;其余十五种氨基酸促生效果不明显。谷氨酸添加量为10mg/L时促生效果最好,凝乳时活菌数可达到4.80×109cfu/mL。并讨论了嗜热链球菌在谷氨酸与牛乳复合培养液中的生长规律。19 kinds of amino acid were selected with milk to culture Streptococcus thermophilus bacteria.The results manifested that glutamate, glycine, serine and proline significantly promoted cell growth of Streptococcus thermophilus when milk was mixed with ,and the viable counts of Streptococcus thermophi/us got to 3.80 × 10^9 ,2.60 ×10^9 ,2.50 × 10^9 and 2.10 × 10^9cfu/mL( Streptococcus thermophilus in antitheses sample was 7.20 × 10^8cfu/mL). Other 15 kinds of amino acid did not ideally promote the growth of ST.Glutamate had ideal effect on cerl growth of Streptococcus thermophilus,and the best viable count could raise to 4.80× 10^9cfu/mL when its content was 10mg/L. The growth rule of Streptococcus thermophflus cultured in the glutamate-milk composite medium was also discussed.
