摘  要:通过纸片法初筛、牛津杯法复筛(排除有机酸、H2O2的干扰以及胰蛋白酶和胃蛋白酶处理)的方法,从分离自内蒙古传统乳制品的135株乳酸菌中筛选到1株具有广谱高效的产细菌素乳杆菌WH12-2-1,经生理生化学特性和16S rDNA序列同源性分析,将该菌株鉴定为戊糖乳杆菌。A bacteriocin producing strain WH12-2-1 was screened from several lactic acid bacteria which were isolated from traditional products in Inner Mongolia by scrip method and cylinder-dish method (eliminated the interference of organic acid and H202, treated with trypsin and pasain). The supernatant of WH12-2-1 had strong bacteriostatic activity against several gram-positive bacteria and gram-negative bacteria. The strain was identified as Lactobacillus pentosus by physiological-biochemical testing and 16S rDNA gene sequence homology analysis.
