摘  要:[目的]为茯砖茶的开发利用提供参考。[方法]对茯砖茶发花过程中的优势菌—冠突散囊菌(Eurotium cristatum)的特征、生长条件、对营养成分的利用及发花过程中茯砖茶主要成分变化的研究进行了综述。[结果]大部分冠突散囊菌菌株在CZG、PDA培养基上生长速度较快,其生长适温为25~35℃,最适生长pH值为5。有机氮对菌落生长具有较好的促进作用,无机态氮、酰胺态氮、氨态氮有利于孢子荫发;有关碳源对菌落生长的影响研究结果不一致。冠突散囊菌可提高茯砖茶的含氮量,减少其可可碱和茶碱的含量,增加脱镁叶绿酸酯a、b及叶黄素、β-胡萝卜素的含量。[结论]有关冠突散囊菌的生理特性、功能特性及其与茯砖茶品质形成的关系等方面的研究有待进一步深入。[Objective] The aim was to provide the references for development and utilization of fu-brick tea.[Method] The researches on the characters,growth condition,utilization on nutritional ingredients of Eurotium cristatum,which was the dominant fungus in the fungus growing process of fu-brick tea,and the changes of major components occurred in fu-brick tea in this process were summarized.[Result] Most strains of E.cristatum grew faster on CZG and PDA media and the suitable temperature and optimum pH value for their growth were 25-35 ℃ and 5 resp.Organic nitrogen(N) had better promoting effect on growth of colony;inorganic N,amide N and ammonia N were favorable to germination of spores;the research results about influences of carbon source on growth of colony were inconsistent.E.cristatum could enhance N content in fu-brick tea,reduce its contents of theobromine and theocin and increase its contents of phaeophorbide ester a and b,carotenol and β-carotene.[Conclusion] The further research on the aspects of physiological and functional characteristics of E.cristatum and its relationship with formation of fu-brick tea quality was needed.
