摘  要:研究了乌龙茶(铁观音)和普洱茶(六堡茶)浸提液对猪胰α-淀粉酶活性的抑制及其动力学。以1/v对以茶液固形物浓度为表征的抑制剂量用Dixon作图,得Ki值分别为铁观音茶浸提液固形物浓度为3.96 mg/mL与六堡茶茶浸提液固形物浓度为13.30 mg/mL,两者的抑制类型皆为非竞争型可逆抑制。Inhibition of the extracts from Olong tea and Puer tea on α-amylase from Porcine Pancreas and the kinetics were studied in this paper. Dixon plotting method was used to identify the inhibition pattern of the extracts. The result showed that the Ki of the extracts were 3.96 mg/mL and 13.30 mg/mL for Olong tea and Puer tea seperately. The inhibitory pattern of the both tea extracts belong to reversible non-competitiveness.
