摘  要:目的:了解陕西省食品中食源性致病菌污染状况。方法:采用现场调查与实验室分析想结合。结果:检测三地15类22种2960份食品,检出食源性致病菌916份,目标菌检出率30.95%。沙门菌、阪歧肠杆菌、副溶血性弧菌、金黄色葡萄球菌、弯曲菌、单增李斯特菌的检出率分别为10.00%、7.78%、31.12%、24.75%、24.48%、15.56%。生猪肉、生牛肉、生禽肉、生羊肉、水产品、速冻类、速冻类荤馅的致病菌检出率分别为16.50%、10.96%、20.58%、10.77%、15.92%、12.66%、24.10%。在时间上以05年最高07年最低。在空间上陕北高于关中高于陕南。结论:要严把生肉尤其是鸡、鸭、鱼肉食品的微生物污染关口,防止生肉食品变质;把握关中陕北人口密度高流动大特征的食品卫生工作;落实监管措施,促进食品安全。Objective:To understand the Food pathogenic bacteria contamination in Shanxi Province.Methods: Combination of on-site investigation and laboratory analysis.Results: The target bacteria have been detected in 916 of 2960 samples of 15 Class and 22 varities from three districts.and t detection rate is about 30.95.%.the detection rate of Salmonella,Kosaka discrimination Enterobacter,Vibrio parahaemolyticus,Staphylococcus aureus,Campylobacter,Listeria monocytogenes were 10.00%,7.78%,31.12%,24.75%,24.48%,and 15.56% respectively,16.50%,10.96%,20.58%,10.77%,15.92%,12.66%,24.10% for pork,beef,poultry,mutton,aquatic products,frozen categories,quick-frozen stuffing respectively,higher in 2005 the lower in 2007 and step lower from the north guanzhong plain,to the southern of Shaanxi.Conclusion: We must strictly control the microbial contamination of meat to prevent the deterioration,especially for chicken,duck,fish etc.,grasp the feature of high population density and flow in northern and Guanzhong plain of Shaanxi;implementation of regulatory measures to promote food safety.
