摘　　要：窖泥与浓香型大曲酒生产关系十分密切,窖泥质量的优劣决定着浓香型大曲酒质量的高低。对不同时期浓香型白酒生产过程窖泥的培养方法和养护方法进行了的阐述。对窖泥老化、培养、养护的科学认识才能正确实现对窖泥培养、养护,提高产酒质量和产量。Pit mud is closely related to the production ofLuzhou-flavor Daqu liquor. Pit mud quality is an important decisive factor of the quality of Luzhou-flavor Daqu. In this paper, appropriate culture and maintenance measures of pit mud in different period in the production process of Luzhou-flavor liquor were introduced. Scientific cognition of the aging, culture and maintenance of pit mud is the prerequisite to achieving appropriate culture and maintenance of pit mud and further enhancing liquor quality and liquor yield.
