摘  要:利用氨基酸自动分析仪,比较分析马氏珠母贝插核贝和未插核贝外套膜、内脏团和闭壳肌的蛋白氨基酸组成含量。结果表明,①未插核贝外套膜、闭壳肌和内脏团氨基酸总含量(质量分数,干样)分别为(13.01±0.02)%、(10.87±0.06)%、(10.41±0.13)%,插核贝分别为(11.31±0.01)%、(14.78±0.10)%和(10.26±0.09)%;②各部位中Asp、Glu和Gly含量高于其他氨基酸。外套膜各氨基酸含量,除Ser、Met、Tyr和Phe无显著变化外,未插核贝Thr、Val和Cys低于插核贝,其余氨基酸高于插核贝,且存在显著性差异。闭壳肌中,除Cys和Pro基本无变化外,未插核贝各氨基酸含量均低于插核后,差异显著(P<0.05)。而内脏团中,除Glu、Val、Ile和Lys未插核贝高于插核贝,Gly和Ala低于插核贝,且存在显著性差异(P<0.05)外,其余氨基酸插核贝和未插核贝均差异不显著(P>0.05)。The effect of bead insertion on amino acid components in mantle,visceral mass and adductor muscle of Pintada martensii was analyzed by Amino Acid Automatic Analyzer.The results showed that ①The total amino acid of mantle,visceral mass and adductor muscle of P.martensii treated out bead insertion were(13.01±0.02)%,(10.87±0.06)%,(10.41±0.13)%,while of those with bead insertion were(11.31±0.01)%,(14.78±0.10)% and(10.26±0.09)%,respectively.②The content of Asp,Glu and Gly was higher than that of other amino acids.In mantle,except Ser,Met,Tyr and Phe,which had no significant change between those with or without insertion,the content of Thr,Val and Cys of shellfish without insertion was lower than that with insertition;while that of others were higher.In visceral mass,the content of amino acid was significantly lower(P〈0.05) in shellfish not treated by insertion except Cys and Pro.Meanwhile,in adductor muscle,Glu,Val,Ile and Lys of shellfish without bead insertion were significantly higher(P〈0.05);as Gly and Ala was significantly lower;and the other amino acid had no difference.
