摘  要:利用黑曲霉和米曲霉混菌一次固态发酵所得豆粕,通过酶解及二次发酵生产富肽产品,研究酶解及二次发酵条件对生产富肽蛋白的影响。结果表明,一次发酵豆粕补3倍水磨浆、接种1%乳酸菌、活性干酵母1∶1混合菌种,木瓜蛋白酶0.3%,37℃发酵12h,再55℃酶解36h所得富肽蛋白小肽质量分数达到75.40%。Using soybean meal by solid-state fermentation with mixed strains of Aspergillus and Aspergillus oryzae,peptide-rich protein was produced by enzymolysis and secondary fermentation. The production condition of peptide-rieh protein was studied. The results Showed that:water in refining process added three times the soybean meal for primary fermentation,inocu-lated with 1% mixed strains(lactic acid bacteria : active dry yeast= 1 : 1), then adding papain 0.3%, fermentation at 37℃ for 12 h,and enzymolysis at 55℃ for 36 h,the rich peptide protein content was up to 75.40%.
