摘　　要：综述了菊芋在国内沙漠化土地以及盐碱地的种植现状,介绍了利用菊芋制备菊粉、果糖、高果糖浆、低聚果糖等产品的国内外研究进展以及菊芋作为食物和发酵原料的应用情况,指出了菊芋可在生产功能糖、发酵基料中替代玉米淀粉的可行性和应用前景。The situation of the planting jerusalem artichoke in desert and saline area in China was reviewed in this paper.In addition,the research advances of using jerusalem artichoke for the preparation of inulin,fructose,high fructose corn syrup,fructo-oligosaccharides,and its utilization as food and fermentation material were presented.Feasibility and application prospects of the jerusalem artichoke produced function sugar,fermentation binder instead of corn starch was pointed out.
