摘 要:食品追溯体系,包括追踪技术和溯源技术,是食品安全监管的重要手段,是"问题食品"有效召回的基本前提。食品追溯体系建设依赖于多种溯源技术的研究和开发,特别是电子标签溯源技术的开发,其研究的重点是技术的科学可行性和稳定性。食品溯源技术的选择及效果与食品种类有关,涉及食品对象的适用性问题。食品溯源技术的实际应用还受到使用成本制约,涉及到应用的经济性和可接受性。本文在对多种食品溯源技术研究和比较的基础上,结合生产示范和应用中的经验与问题,总结提出了食品溯源技术研究与应用的科学可行性、食品对象适用性和应用经济性原则,以指导食品溯源技术的研究、示范和应用。Food traceability system, including tracking and tracing technologies, is an important means of supervision for food safety, and also is a fundamental premise for effectively recalling the trouble food. Building a food traceability system depends on research and development of multi-tracing techniques, especially electronic tag tracing technique,which focus on scientific feasibility and stability of tracing techniques. The choice and effect of tracing techniques is related to food types, which refer to the suitability of tracing technique. Furthermore, the cost of tracing techniques is another limited factor during the application, which refers to the economy and acceptability of application. On the basis of research and comparison of multiple tracing techniques, and combining with the experience and problem of demonstration and practice, three application principles of food tracing technology were summarized, which includes scientific feasibility, food suitability and economic acceptability. The aim is to instruct the research, demonstration and application of food tracing techniques.
