摘　　要：淀粉是重要工业原料,具有可再生性;由淀粉为原料制备功能性甜味剂,包括功能性低聚糖、功能性糖醇和功能性单糖等,具有良好化学性质和生理功能,在食品、饲料、医药、化工等业有着广泛应用。该文将概述这些功能性甜味剂性质及其制备方法。Starch, one of the most important industrial raw materials, is a renewable resource. Functional Sweeteners made from starches such as functional oligosaccharides, functional glycitols, and functional monosaccharide feature their fine chemical and physiological functions, and are used widely in food, feed, medicine and chemistry industries. The properties and preparation of these functional sweeteners are discussed in this paper.
