摘 要:对一种蔗渣膳食纤维复合固体饮料配方进行了研究,考察了蔗渣糠粉用于膳食纤维的可行性,通过单因素及正交试验,确定了该饮料生产的最佳配方和制作工艺。结果表明:蔗渣糠粉吸水性能良好,是优质的纯天然膳食纤维原料;蔗渣膳食纤维固体合饮料最佳配方为蔗渣糠粉15%、白砂糖20%、柠檬酸0.2%、麦芽糊精25%,剩余组分为米粉。该饮料冲调后口感清润,酸甜适宜。A study was conducted on the formula of a complex instant beverage containing bagasse dietary fiber,and the possibility of bagasse bran used in dietary fiber was analyzed. Based on single-factor and orthogonal experiments,the optimum formula of and the optimal production process for the beverage were determined. The results showed that bagasse bran,with excellent wa- ter absorptivity,was a high-quality all-natural material for dietary fiber;the optimum formula of the complex beverage was as follows:bagasse bran 15%, white granulated sugar 20%,citric acid 0.2% and maltodextrin 25%. The beverage ,when mixed with water,was featured by a good taste and pleasant sweetness and sourness.
