野生映山红花瓣营养成分及营养价值研究

摘　　要：采用现代化分析检测手段对野生映山红瓣营养成分进行了全面分析;并对野生映山红花瓣各营养素价值进行了综合评价。结果表明,野生映山红花瓣中各营养成分含量分别为:水分83.12%、总糖7.15 g/100 g、蛋白质5.75 g/100 g、脂肪0.26 g/100 g、纤维素2.63 g/100 g,平均营养价值为4.912,高于红富士苹果(3.354)、雪花梨(4.059)和生菜(4.505),但比菠菜(6.557)和空心菜(6.454)要低。The use of modem analysis methods for the wild azalea petals of nutritional components was analyzed; And the wild azalea valve each nutrient content was evaluated. The results showed that the wild azalea of nutrient content： moisture 83.12%, 7.15 g/100 g total sugar, 5.75 g/100 g protein, 0.26 g/100 g fat, 2.63 g/100 g cellulose. The average nutritional value was 4.912, higher than that of Fuji apple （3.354）, snowflake pear （4.059） and lettuce （4.505）, but lower than spinach （6.557） and hollow dish （6.454）.
