摘  要:以湖北省特色水产武昌鱼(Megalobrama amblycephala)为材料,采用顶空固相微萃取(HS-SPME)和GC-MC分析武昌鱼中的挥发性化合物。以鱼肉中含量较多的化合物[己醛、苯甲醛、1-辛烯-3-醇、辛醛、(Z)-1,3,6-辛三烯,3,7-二甲基、(E)-2-辛烯醛、壬醛、(E)-2-壬烯醛、壬醇、(E,E)-2,4-癸二烯醛]为参照对象,优化获得最佳萃取条件为取鱼肉样品3 g于10 mL饱和食盐水(36%NaCl),DVB-CAR-PDMS60℃萃取60 min。在此优化条件下,经气质分析,NIST08标准谱图库检索和文献对照,共确定62种成分。其中醛类、酮类和醇类所占比例最大,分别为21.66%、4.84%和54.29%。The volatile components of Hubei special aquatic product, Megalobrama amblycephala were extracted by headspace solid-phase microextraction(HS-SPME) and identified by gas chromatography-mass spectrometry(GC-MS). The extractions were optimized with reference to these high content of compound in the fish as hexanal, benzaldehyde, 1-octen-3-ol, octanal,(Z)-1, 3, 6-octatriene, 3,7-dimethyl,(E)-2-octenal, nonanal,(E)-2-nonenal, nonanol,(E, E)-2, 4-decadienal. The optimized conditions of HS-SPME were as follow: divinyl benzene-carboxen-polydimethylsiloxane(DVB-CAR-PDMS) fiber, the quality of fish(3 g), extraction time(60 min), extraction temperature(60 ℃), saturated salt water(10 mL)(36% NaCl). The extraction of volatile components from fresh Megalobrama amblycephala were determined using the optimized conditions of HSSPME coupled with GC-MS. 62 volatile components were identified by comparing their mass spectra with those contained in the NIST08 mass spectral database and reference documents. The greatest relative amounts of aldehydes, ketones and alcohols were 21.66%, 4.84% and 54.29%, respectively.
