摘　　要：该文详细研究了酵母自溶酶类 ,作用机理 ,自溶过程中酵母细胞结构的变化 ,大分子物质的降解模式 。In this Paper the ferment types of yeast autoly sis,reaction mechanism,the change of yeast cell structure in the autolysis proce ss,the dissociative models of macromolecule substance are discussed in details,w hich provides much theoretical basis for the production of yeast extract.
