摘　　要：食醋是我国传统的调味品,同时具有调味和生理保健的功能。主要对食醋的营养价值及其保健功能进行综述,以期为新型保健食醋研发及其功能因子的研究提供一定理论依据。Vinegar is a kind of traditional condiments in our country. At the same time, it has the functions of seasoning and physical health care. In this paper, the main nutritional value and health functions of vinegar are reviewed, hope to provide some theoretical basis for the development and functional factors of new-type healthy vinegar.
