摘 要:通过研究黄酒的近红外光谱和利用化学计量学的技术,采用偏最小二乘法建立快速检测黄酒的酒精度、总糖和总酸的近红外模型。用相关系数(R)、交叉验证均方差(RMSECV)和相对分析误差(RPD)衡量模型的预测精度和稳定性,R值分别为0.9994,0.9989,0.9780,RMSECV值分别为0.0891,0.6980,0.0898,RPD值分别为27,21,4.8,RPD≥3表明建立的模型效果良好。研究结果表明,近红外光谱法可用于快速检测黄酒酒精度、总糖和总酸,为黄酒食品安全质量控制体系的建立提供了快速检测手段。On the basis of near infrared spectroscopy and chemometrics, the rapid detection model of Chinese rice wine was established using partial least square. The accuracy and stability of the model was evaluated by coefficient of determination (R), cross-validation mean square (RMSECV) and relative percent deviation (RPD). The R values were 0.999 4, 0.998 9 and 0.978 0, respectively, the RMSECV values were 0.089 1, 0.698 0 and 0.089 8, respectively, and the RPD values were 27, 21 and 4.8, respectively. The RPD values greater or equal to 3 indicated good modeling effect. The results showed that the near infrared spectroscopy technology can be used for rapid determination of alcohol content, total sugar and acid in Chinese rice wine, it also provided rapid detection methods for the establishment of food safety quality control system of Chinese rice wine.
