摘  要:好曲酿好酒请您找良友山东梁山良友生物工程有限公司,是中国大曲基地一家集生产、科研为一体,继传统工艺之精华,集名家科学创新之成果,具有生产高科技含量产品的现代化生物工程公司,高新技术企业。大曲年生产量超3万吨,酶制剂近5千吨,公司成立以来,确立了"质量第一、信誉至上、服务周到"的经营方针,真诚欢迎国内外新老客户来电、来人洽谈合作。我们愿与新老客户携手共赢、共创酒业辉煌。In the experiment, the activity of multiple enzymes in Jiangxiang Daqu (three kinds of Daqu including white Daqu, black Daqu and yellow Daqu) was detected by titration method and spectrophotometric method. The detection results suggested that, with the extension of the storage time of Jiangxiang Daqu, the change trends of the activity of enzymes in three kinds of Daqu were different. Enzyme activity in yellow Daqu commonly decreased, enzyme activity in white Daqu and black Daqu presented wavy fluctuation, and enzyme activity in yellow Daqu was lower than that in white and black Daqu. Generally, the activity of enzyme reached up to the highest in newly-produced Daqu or in Daqu at three-month storage, and it was the highest after six-month or nine-month storage occasionally. The facts suggested that, newly-produced Daqu and Daqu at three-month storage was beneficial to the degradation of raw materials and the formation of flavoring substances and flavoring precursors.
