摘  要:益生菌具有安全性、功能性和在胃环境中生存的能力。由于具有比其他天然产品更多的优势,益生菌已被广泛应用于有益健康的产品中。旨在开发一种具有多重保健作用的复合益生菌产品。分别采用纳豆芽孢杆菌(Bacillus natto)、嗜酸乳杆菌(Lactobacillus acidophilus)、双歧杆菌(Bifidobacterium)为菌株。培养的菌体经收集、洗涤后,加入适当的保护剂,经真空冷冻干燥制成益生菌粉单体,再经复配制成复合益生菌粉制剂。通过单因素试验及L9(34)正交优化。研究表明,纳豆芽孢杆菌的最佳组合是甘油为2%,脱脂乳粉为15%,明胶为2%,海藻糖为12%;嗜酸乳杆菌的最佳组合是海藻糖为12%,脱脂乳粉为5%,蔗糖为5%,明胶为2%;双歧杆菌的最佳组合是明胶为1.5%,脱脂乳粉为15%,海藻糖为10%,蔗糖为5%。Probiotics are safety,functionality,and they get ability to survive in the environment of the stomach.Due to owning more advantage than other natural products,probiotics have been widely used in products that can promote health.Aim to develop a kind of compound probiotic products which has various health-beneficial effects.Products use Bacillus natto,Lactobacillus acidophilus and Bifidobacteria for strains.The cultured cells were collected,washed,added an appropriate protective agent to make probiotic powder unit by vacuum freeze-drying.Then compound the protective agents to produce complex-probiotic powder formulations.Single factors test and the L_9(3~4) orthogonal optimization research shows that the best combination of Bacillus natto is 2% glycerol,15% skim milk powder,2% gelatin,12% trehalose;the best combination of acidophilus coli is 12% trehalose,5%skim milk powder,5% sucrose,2%gelatin;the best combination of Bifidobacterium is 1.5% gelatin,15%skim milk powder,10% trehalose,5% sucrose.
