摘 要:对市售9种商品稻米油的脂肪酸组成、微量营养成分含量进行测定分析。结果表明:9种稻米油脂肪酸组成种类稳定,主要脂肪酸油酸占38.99%-44.14%、亚油酸占29.41%-37.47%、棕榈酸占15.62%-19.25%,油酸与亚油酸比例接近国际卫生组织推荐的1∶1比例;9种稻米油样品微量营养成分含量范围波动较大,其中2号样品谷维素含量最高,达11 284 mg/kg,3号样品总生育酚及角鲨烯含量最高,分别为600.23、3 327.58 mg/kg。The fatty acid composition and contents of trace nutrients in nine commercial rice bran oils on sale were determined and analyzed. The results showed that the types of fatty acid composition of nine rice bran oils were stable, and the contents of the main fatty acids oleic acid, linoleic acid and palmitic acid were 38.99% - 44.14%, 29.41% - 37.47% and 15.62% - 19.25% respectively, and the ratio of oleic acid to linoleic acid was close to 1:1 of the World Health Organization recommendation; the content range of trace nutrients in the nine rice bran oils had a large fluctuation, in which the content of oryzanol in the 2nd sample was the highest, 3rd sample were the highest, up up to 11 284 mg/kg, and the contents of total tocopherol and squalene in the to 600.23 mg/kg and 3 327.58 mg/kg, respectively.
