摘  要:以小麦麸皮为原料,采用固态发酵法和复合酶-碱提法制备两种可溶性膳食纤维(SDF)。两批BALB/c小鼠经口灌胃后,分别测定小肠墨汁推进率、首粒排黑便时间、5h内排便粒数和重量。结果显示,小麦麸皮可溶性膳食纤维均能提高小肠墨汁推进率,与阴性对照组相比,SDF碱提组具有极显著性差异(P<0.01),SDF发酵组具有显著性差异(P<0.05);排便实验中,SDF碱提组和SDF发酵组的首粒排便时间均有所缩短,而SDF碱提组的5h排便重量与阴性对照组相比,有极显著差异(P<0.01),从而得出结论,碱提法制得的可溶性膳食纤维对小鼠通便效果更佳。In this paper,solid state fermentation and alkali extraction with enzyme complexes were used to prepare two wheat bran soluble dietary fiber(SDF). Two groups of mice perfusing stomach 10 days and 16 days were used to determine the ink propelling rate,defecation time,quantity and weight. The results showed that two SDF both improved the ink propelling rates,while compared with the negative group,the ink propelling rates of alkali extraction group were significantly increased(P〈0.01),and so did in fermentation group(P〈0.05). Furthermore,in comparison with the negative group,the defecation time of all groups decreased,and defecation weight of alkali extraction group were significantly increased(P〈0.01). Therefore,alkali extraction with enzyme complexes was better than solid state fermentation on laxative effects.
