摘  要:黄曲霉毒素M1(AFM1)是在一定条件下存在于奶制品中的强致癌物。目前国内外的研究集中在如何检测AFM1,而如何有效去除AFM1还未见研究报道。本文从非洲象粪便中分离出1株能够有效降解AFM1的短小芽孢杆菌E-1-1-1。通过单因素和正交试验优化其降解条件,确定该菌株降解AFM1的最佳营养条件是:碳源为0.6%麦芽糖,氮源为1%酵母粉;最佳培养条件是:p H 6,培养温度37℃,接种量3%。在该优化条件下短小芽孢杆菌E-1-1-1对AFM1的降解率达到92.5%,为有效去除奶制品中的AFM1奠定了基础。本方法具有广阔的应用前景。Aflatoxin M1(AFM1) is a kind of strong carcinogens which exists in the dairy of certain conditions. The current domestic and international research was just focused on how to detect AFM1. There has not been reported that how to effectively remove AFM1. In this paper, we isolated a strain of Bacillus pumilus E-1-1-1 from the African elephant dung and optimized the degradation conditions with the single factor method and orthogonal experiment. The best nutrition conditions to degradate the AFM1 we have identified was as follows: carbon source was maltose(0.6%), nitrogen source was yeast powder(1%). The best culture conditions were: p H was 6, culture temperature was 37 ℃, inoculated quantity was 3%. With the optimized conditions, the degradation rate reached 92.5%. This paper laid a solid foundation for the effective removal of AFM1 of dairy products,and it has a broad application prospect.
