摘 要:采用水提和碱提两种方法提取枣粉与枣渣中的大枣粗多糖,并比较了多糖得率、粗多糖纯度、蛋白质含量、糖醛酸含量和抗凝血活性的差异。结果表明:就提取出的中性多糖而言,水提枣粉的提取率和多糖纯度分别为4.45%、49.72%;水提枣渣的提取率为4.24%,多糖纯度为39.30%;碱提枣粉的提取率为79.11%,多糖纯度为28.82%;碱提枣渣的提取率为45.53%,多糖纯度为4.24%;枣粉多糖和枣渣多糖均具有一定的抗凝血活性。Two methods( water extraction and alkali extraction) were used to extract the crude polysaccharide from jujube and jujube residues,compared the differences of the crude polysaccharide extraction rate,crude polysaccharide purity,protein contents,uronic acid contents and blood anticoagulant activity. The results showed that the yield of polysaccharide from jujube by water extraction process was 4.45%,the polysaccharide purity was 49.72%. On the contrary,the yield of polysaccharide from jujube residues was 4.24%,and the polysaccharide purity was 39.30%. The yield of polysaccharides from jujube by alkali extraction was 79.11%,and the polysaccharide purity was 28.82%. The polysaccharides from jujube residues was 45.53%,and the polysaccharide purity was 4.24%. The crude polysaccharides from jujube and jujube residues both had blood anticoagulant activities.
