摘 要:为研究枣皮红色素的抗氧化活性,通过紫外、近红外分析光谱对该色素的结构进行初步鉴定,并采用DPPH自由基清除体系、水杨酸Fenton体系、亚硝酸根离子自由基清除体系、ABTS自由基清除体系、H_2O_2清除体系及普鲁士蓝法测定了枣皮红色素对自由基的清除能力和总还原能力。结果表明:枣皮红色素可能属黄酮类物质,其对DPPH·、·OH、O_2^-·、NO_2^-·、ABTS^+·、H_2O_2均有一定的清除能力,清除率和还原能力随着色素浓度的增加而增加,且清除H_2O_2能力和总还原能力均明显大于同浓度的Vc溶液。枣皮红色素是一种较好的自由基清除剂,可作为天然抗氧化剂开发利用。To explore the antioxidant activity of red pigment from jujube peel, the structure primary identification was studied by ultraviolet and near infrared spectroscopy, and the pigment on free radical scavenging capacity and total reduction ability was determined by DPPH free radical scavenging system, salicylic acid Fenton system, nitrite ion free radical scavenging system, ABTS free radical scavenging system, H2O2 scavenging system and Prussian blue method. The results showed that the red pigment from jujube peel may contain flavonoids, and it showed scavenging abilities towards DPPH·, ·OH, O2^-·, NO2^-·, ABTS^+· and H2O2, the scavenging and reducing ability increased with the raise of pigment concentration, and scavenging ability towards H2O2 and total reducing ability are significantly higher than the same concentration of Vc solution. Therefore, the red pigment from jujube peel is a kind of natural free radical scavenger, which can be used as a natural antioxidant.
