摘 要:为了改善斑蝥黄微胶囊产品的喷雾干燥效果,优化喷雾干燥工艺,主要研究了乳液黏度、进风温度、雾化器频率和乳液/淀粉流量比的变化对斑蝥黄微粒喷雾干燥效果的影响,并采用正交试验优化喷雾干燥条件,分析乳液黏度、进风温度、雾化器频率和乳液/淀粉流量比的变化对产品的收率、产品品质的影响。结果表明:当乳液黏度为750c P,进风温度为120℃,雾化器频率为40HZ,乳液/淀粉流量比为1/3时,产品收率最高,达97.2%,所制备的斑蝥黄微粒的水分含量为3.9%,粒度主要分布在30~80目之间,松密度为0.655g/cm3,紧密度为0.736g/cm3,水分活度为0.501,不易滋生微生物,全反式体比例为95.14%,生物活性强,加速试验90d,保留率达95.6%,稳定性好。In order to improve the processing technology of microencapsulate Canthaxanthin beadlet,the effects of spray drying technological parameters,including emulsion viscosity,inlet air temperature,atomizer frequency and ratio of emulsion and starch flow on spray drying of microencapsulate of Canthaxanthin beadlet were analyzed by orthogonal experiment. The results showed that the best conditions were emulsion viscosity 750 c P,inlet air temperature 120℃,atomizer frequency 40 HZ and the ratio of the emulsion and starch flow 1/3. The yield of the product was 97.2%,and the moisture content of the product was 3.9%. The particle size was mainly distributed in 30 ~ 80 mesh. The bulk density was 0.655g/cm3,the compact density was 0.736g/cm3,and the water activity was 0.501 which was not in favor of growing microorganisms. All-trans format of canthaxanthin beadlet was 95.6%,and biological activity was high. The retention rate was 95.6% in the accelerated test for 90 days.
