摘  要:β-胡萝卜素具有多种对人体有益的生理活性,但其物理化学不稳定性、低水溶性,这些都会导致β-胡萝卜素低的生物利用率,从而极大地限制了β-胡萝卜素在食品工业中的应用。近年来,为了改善β-胡萝卜素的物化不稳定性、低水溶性及低的生物利用率,越来越多利用不同包埋技术构建的食品级运载体系来负载β-胡萝卜素。载β-胡萝卜素食品级运载体的研究与开发能够更加广泛地提高β-胡萝卜素的应用。本文综述了近年来不同包埋形式的食品级运载体系对β-胡萝卜素的负载特性和所存在的相关问题,为开发性能优良的食品级运载体系和提高β-胡萝卜素的稳定性、生物利用率提供一定理论的参考。Beta-carotene has various beneficial biological activities to human, but its poor physicochemical properties and solubility will lead to the low bioavailability, which can greatly limit the application of beta-carotene in the food industry.In recent years, in order to improve its poor physicoehemieal properties, solubility and bioavailability, more and more researches are carried out for the food-grade delivery systems in different encapsulating technology loading beta-carotene.As a result, the research and development of these food-grade delivery systems can widen the range of the application of beta-carotene.ln this article, the characteristics of the loaded beta-carotene and the existing problem about the food-grade delivery systems in recent years were summarized, aiming to provide certain theory reference for developing the better food-grade delivery systems and improving the stability and bioavailability of beta-carotene.
