摘 要:收集我国小麦主产区12家大型面粉企业的小麦麸皮样品,在基本营养和安全品质分析基础上,采用ICP-MS重点对样品矿物元素进行对比分析。结果表明:样品中的膳食纤维、粗蛋白、总淀粉、粗脂肪、灰分平均含量分别为46.07%,18.77%,18.36%,3.37%,6.02%,戊聚糖占总膳食纤维的59.28%;小麦麸皮富含矿物元素,必需常量元素中K含量最高,Na含量变化最大(变异系数73.09%);必需微量元素中Fe含量最高,Se,Co含量变化最大(CV>80%)。统计分析结果表明,小麦麸皮必需矿物元素之间存在一定的相关性,K,Mo,Mn,Se,Co是小麦麸皮必需矿物元素的特征元素,小麦麸皮中矿物元素含量存在很大的地域性特征。根据食品中污染物限量标准,所有样品的有毒矿物元素中As均未超标,部分样品Cd和Pb超标。研究结果为小麦麸皮品质评价和开发利用提供数据支持。12 samples were collected from the enterprises of major wheat-producing region of China. The mineral elements were determined and compared based on ICM-MS method besides basic nutrition and safety quality analysis. The results showed that the average content of dietary fiber, crude protein, total starch, crude fat and ash were 46.07%, 18.77%, 18.36%, 3.37% and 6.02% respectively, and pentosan occupied 59.28% of total dietary fiber. Wheat bran was rich in mineral elements, for the required constant mineral elements, the content of K was the highest, and the amplitude of Na content was the highest(CV: 73.09%); for the essential trace mineral elements, the content of Fe was the highest, and the amplitude of Se and Co contents were the highest(CV〉80%). The statistical analysis results indicated that there was a certain correlation among essential mineral elements, and K, Mo, Mn, Se and Co were the characteristic of mineral elements in wheat bran, and the content of mineral elements in wheat bran presented great regional. According to the limit standard of contaminants in food, As was lower than the limit range in all samples, but Cd and Cd were higher than the limit range for part of samples. The results may provided available data support for the quality evaluation and use of wheat bran in China.
