摘 要:采用ICP-OES法检测375份小麦粉及其制品中铝元素含量并进行分析,以国家标准100 mg/kg作为油条判定依据,结果有83.6%的油条超标;24.2%烧饼、55.8%馒头超过45 mg/kg。铝含量>45 mg/kg的乡镇、城区面制品分别占54.2%、24.8%;铅含量>100 mg/kg乡镇、城区面制品分别为50.9%、18.8%。大中型餐饮单位、小吃店、路边摊位、超市样品中>100 mg/kg的占比分别为18.6%、61.8%、72.9%、32.4%。经Kruskal-Wallis多个样本非参数检验,4类面制品中铝含量、不同业态类型餐饮单位面制品间铝含量差异有统计学意义(P<0.05)。375 wheat and wheat flour products were collected to analyze the content of aluminum with ICP-OES. 83.6% flied bread stick samples were above 100 mg/kg. 24.2% clay oven rolls and 55.8% steamed bread were above 45mg/kg, respectively. 54.2%, 24.8% wheat flour products from rural area and the city were above 45 mg/kg, separately. 50.9%, 18.8% wheat flour products from rural area and the city were above 100 mg/kg, respectively. The content of aluminum above 100 mg/kg from largesized catering units, snack bar, roadside stall and supermarket accounted for 18.6%, 61.8%, 72.9% and 32.4%, respectively. There was statistical significance among different type of samples and types of different catering units (P〈0.05).
