摘  要:通过单因素和正交试验研究山楂红枣姜汁饮料的最佳配方。结果表明:姜汁最佳酶解条件为反应时间70m in,料液比为1∶10,淀粉酶添加量0.02%。最佳柠檬酸添加量0.05‰。红枣最佳酶解条件为反应时间2h,料液比为1∶9,果胶酶添加量0.14%。山楂最佳酶解条件为反应时间4h,料液比为1∶7,果胶酶添加量为0.14%。复合三汁饮料的最佳配方山楂汁∶红枣汁∶姜汁为3∶3∶1,白砂糖添加量为8%,食盐添加量为0.4%,柠檬酸添加量为0.2%。产品具有良好的风味和外观,而且富含多种营养成分。This article introduced the research on the optimum recipe of hypolipidemic healthy drink using single factor and orthogonal experiments.The result showed the best hydrolysis reaction time of ginger juice was 70 min,the radio of material and liquid was 1∶10,amylase level was 0.02%,the best content of citric acid was 0.05‰.The best hydrolysis reaction time of jujube juice was 2h,the radio of material and liquid was 1∶9,pectinase leve was 0.14%.The best formula of Hypolipidemic healthy drink was that hawthorn juice∶jujube juice∶ginger juice 3∶3∶1,white sugar content 8%,salt content 0.4%,citric acid added 0.2%.The product had pleasant flavor and appearance,also contained many nutriments.
