摘 要:以武昌鱼为研究对象,在基础保鲜剂配方中加入茶多酚、溶菌酶与壳聚糖,以挥发性盐基氮和菌落总数为评价参数进行L_(9)(3^(4))正交实验,优化武昌鱼天然复合卤味保鲜剂的配方。实验结果表明,武昌鱼保鲜剂的最佳配方为生姜2.5%、花椒0.3%、盐浓度3.2%、壳聚糖浓度5.0 g·kg^(-1)、茶多酚浓度0.1 g·kg^(-1)和溶菌酶浓度0.5 g·kg^(-1);进一步在4℃条件下冷藏,对比武昌鱼实验组(优化后保鲜剂)与对照组(基础保鲜剂)的挥发性盐基氮、菌落总数以及丙二醛、感官评价和pH值,结果显示对照组挥发性盐基氮、菌落总数、pH值、丙二醛测定值高于实验组,且对照组相比于实验组感官评价分值下降更快。使用优化后保鲜剂的武昌鱼能在4℃冷藏条件下延长5 d保藏时间,维持良好的新鲜度。研究结果为武昌鱼工业化生产提供了重要的理论依据。Taking Megalobrama amblycephala as the research object,tea polyphenols,lysozyme and chitosan were added to the basic preservative formula,and the L_(9)(3^(4))orthogonal experiment was carried out with the volatile base nitrogen and the total number of colonies as the evaluation parameters to optimize the the production process of Megalobrama amblycephala natural compound brine preservation solution.The experimental results showed that the optimal formula of Megalobrama amblycephala preservative was 2.5%ginger,0.3%prickly ash,3.2%salt concentration,5.0 g·kg^(-1) chitosan,0.1 g·kg^(-1) tea polyphenols and lysozyme.Concentration of 0.5 g·kg^(-1);further refrigerated at 4℃,the volatile base nitrogen,total number of colonies,malondialdehyde,sensory evaluation and pH value of Megalobrama amblycephala experimental group(preservative after optimization)and control group(basic preservative)were compared,the results showed that the measured values of volatile base nitrogen,total number of colonies,pH value,and malondialdehyde in the control group were higher than those in the experimental group,and the sensory evaluation scores of the control group decreased faster than that of the experimental group.The Megalobrama amblycephala with the optimized preservative can be stored at 4℃for 5 d longer and maintain good freshness.The research results provide an important theoretical basis for the industrial production of Megalobrama amblycephala.
