摘　　要：以《食品分析》为研究对象,根据《食品分析》课程特点和在长期教学过程中发现的问题,提出以面向食品实际分析检测技术为项目基础,采用项目驱动与科研启蒙的教学方式,对《食品分析》课程的教学内容、教学计划、教学考核和实现方式进行改革探讨。本文构建的《食品分析》教学改革可为食品质量与安全专业和食品科学与工程体系框架的建立奠定一定的基础,对食品相关专业教育的可持续发展将起到极大的推动作用。Food Analysis course was selected as the research object.According to the characteristics of Food Analysis course and problems found in the long-term teaching process and on the basis of the actual analysis and testing technology of food,the reform on the teaching content,teaching plan,teaching assessment and realization method of Food Analysis course was discussed by applying the teaching method of project-driven and enlightenment of scientific research.The teaching reform on Food Analysis course could provide a certain foundation for the establishment of food quality and safety specialty and food science and engineering system framework,and play a great role in promoting the sustainable development of food related specialty education.
