摘 要:以豆渣为原料,采用生物酶法对豆渣中可溶性与不溶性膳食纤维进行提取,通过单因素试验和正交试验,以膳食纤维的提取率为评价指标,得到提取豆渣中总膳食纤维的最佳工艺方法。结果表明,酶法提取豆渣中膳食纤维的最佳工艺条件为料液比1∶20,糖化酶添加量2%,木瓜蛋白酶添加量2%,提取温度60℃,在此条件下总的膳食纤维提取率为12.6%。In this paper,the soluble and insoluble dietary fiber from soybean residue was extracted by enzymatic method,single factor and orthogonal test method,the extraction rate of soybean residue as evaluation index,the main process parameters were optimized,and the best process method of dietary fiber from soybean residue was obtained.The experimental results showed the optimum conditions of extracting dietary fiber from soybean residue.On condition that the ratio of solid and liquid was 1∶20,the amount of diastase was 2%,the amount of saccharifying enzyme was 2%,and the optimum extraction temperature was 60℃,the optimum conditions of enzymatic extraction of dietary fiber from soybean residue were 12.6%.
