摘  要:以玉米加工副产品玉米皮渣为原料,利用超声波辅助醇提取法提取玉米黄色素。以玉米黄色素的提取率为主要衡量指标,通过单因素实验和正交实验,得到提取玉米黄色素的最佳工艺条件。正交实验结果表明:当超声浸提时间为40 min、料液比为1∶12 g/mL、提取温度为60℃、溶液pH为6时,玉米黄色素最高提取率为6.02%。抗氧化实验结果表明:当样品质量浓度为1,2,3,4,5 mg/mL时,提取的玉米黄色素具有一定的总还原能力、清除DPPH自由基和羟基自由基能力,且这些能力随着样品质量浓度的增加而提高。超声法提取玉米黄色素提取率高,所提取的玉米黄色素具有一定的抗氧化能力。Corn husk residue from the by-product of corn processing was used as the raw material for ultrasonic-assisted ethanol extraction of corn yellow pigment.The extraction rate of corn yellow pigment was selected as the primary measurement index based on a single factor and orthogonal experiments in order to determine the optimal extraction conditions.When the ultrasonic extraction time was 40 min,the material-to-liquid ratio was 1∶12 g/mL,the extraction temperature was 60℃,and the pH value of the solution was 6,the highest extraction rate was 6.02%.The antioxidant activity test revealed that the extracted corn yellow pigment possessed a certain total reducing ability,DPPH and hydroxyl free radical scavenging ability,and that this ability increased with the sample concentration,when the sample concentration was 1~5 mg/mL.It demonstrated that the pigment s extraction rate was high and that it possessed antioxidant properties.
