摘 要:以小米麸皮为原料,优化纤维素酶辅助木聚糖酶提取小米麸皮中阿魏酰低聚糖(FOs)的工艺,并对FOs的抗氧化性进行研究。结果表明:最佳提取条件为反应温度60℃、底物质量浓度0.013 3 g/mL、纤维素酶添加量25.00 mg/g(以小米麸皮粗纤维质量计)、反应时间2 h,在此条件下提取的小米麸皮FOs浓度为4.5μmol/L。小米麸皮FOs的抗氧化性较高,具有较强的清除DPPH自由基、羟基自由基和超氧阴离子自由基的能力,且还原力较强。The extraction of feruloyl oligosaccharides(FOs)from millet bran by cellulase assisted xylanase was optimized,and the oxidation resistance of FOs was studied.The results showed that the optimal extrac-tion conditions were as follows:reaction temperature 60 C,substrate mass concentration 0.0133 g/mL,cellulase dosage 25.00 mg/g(based on the mass of millet bran crude fiber),reaction time 2 h.Under these conditions,the concentration of FOs extracted from millet bran was 4.5μmol/L.The oxidation ri-sistance of millet bran FOs was high,and it had strong ability to scavenge DPPH free radicals,hydroxyl free radicals and superoxide anion free radicals,and the reducing force was strong.
