摘  要:对实验室保存的38株乳酸菌进行筛选,得到高产胞外多糖菌株S.thermophilus S106。采用单因素、响应面优化S.thermophilus S106发酵培养基,当酪蛋白胨浓度为13.9 g/L、酵母浸粉浓度为6.6g/L、葡萄糖浓度为29.2 g/L时,多糖产率为(4.22±0.12)g/L。HPLC分析显示S106 EPS主要由甘露糖、葡萄糖和半乳糖组成,红外光谱显示S106 EPS具有多糖典型的结构和官能团。S106 EPS具有良好的乳化能力、抑菌能力和抗氧化能力,在食品、药品和化妆品领域有着较好的应用潜力。The strain S.thermophilus S106 with high yield of exopolysaccharides(EPS)was screened from 38 strains preserved in the laboratory.The fermentation medium of S.thermophilus S106 was optimized by single factor tests and response surface method.When the concentration of casein peptone was 13.9 g/L,the concentration of yeast extract was 6.6 g/L,the concentration of glucose was 29.2 g/L,the yield of exopolysaccharide was(4.22±0.12)g/L.HPLC analysis showed that S106 EPS was mainly composed of mannose,glucose and galactose.Infrared spectra showed that S106 EPS had typical structure and functional groups of polysaccharides.S106 EPS had good ability of emulsification,bacteriostasis and antioxidation.S106 EPS has good application potential in the fields of food,medicine and cosmetics.
