云贵地区鱼腥草挥发性成分的对比分析

摘  要:以我国云南和贵州地区的鱼腥草为研究对象,对其挥发性成分进行对比分析。首先采用电子鼻(Electronic nose,E-nose)对鱼腥草的风味特征进行比较和分析;在此基础上,进一步采用顶空固相微萃取法(Headspace solid phase microextraction,HS-SPME)结合气相色谱-质谱联用技术(Gas chromatography-mass spectrometry,GC-MS)对比分析样品间挥发性风味化合物的差异。并对鱼腥草进行炒、煮等简单烹饪,分析两地鱼腥草的风味特征和物质组成的变化。结果显示:云贵地区鱼腥草的主要香气成分均为酯类、烯烃类和酮类,云贵地区鱼腥草风味的差异主要源于鱼腥草烯烃类物质、酯类物质和酮类物质含量和种类的不同。云贵地区新鲜鱼腥草共检测出45种挥发性物质,其中有29种共同的挥发性物质。月桂烯是贵州新鲜鱼腥草挥发性物质中含量最多的物质,而在云南新鲜鱼腥草中甲基正戊酮的含量最高。The volatile constituents of Houttuynia cordata from Yunnan and Guizhou regions of China were comparatively analyzed as research objects.Firstly,the flavor characteristics of Houttuynia cordata were compared and analyzed by using an electronic nose(E-nose).On this basis,headspace solid phase microextraction(HS-SPME)combined with gas chromatography-mass spectrometry(GC-MS)was used to further compare and analyze the differences of volatile flavor compounds in each sample.The samples were also subjected to simple cooking,such as stir-frying and boiling,to analyze the flavor characteristics and changes in the composition of Houttuynia cordata in the two regions.The results showed that the main aroma components of Houttuynia cordata from both Guizhou and Yunnan were esters,olefins and ketones,and differences in the flavor of Houttuynia cordata in Yunnan and Guizhou regions mainly originated from the differences in the content and types of olefins,esters and ketones of Houttuynia cordata.A total of 45 volatile substances were detected in Houttuynia cordata from Yunnan and Guizhou regions,among which 29 volatile substances were all found in Houttuynia cordata from both regions.Laurylene was the most abundant substance in fresh Houttuynia cordata from Guizhou,while the highest content of methyl-n-pentanone was found in fresh Yunnan Houttuynia cordata.
