摘 要:目的:分析2023年深圳市龙岗区复用餐饮具微生物污染状况,为监管部门开展针对性预防措施及餐饮服务单位提高堂食安全提供科学依据。方法:按照《食品安全国家标准消毒餐(饮)具》(GB 14934—2016)对深圳市龙岗区复用餐饮具进行随机抽样,并对沙门氏菌和大肠菌群等微生物指标开展检测。结果:2023年深圳市龙岗区复用餐饮具总体合格率为88.1%,其中,盘碟和碗的微生物污染情况较突出,小吃店和快餐馆的微生物污染情况较明显。结论:深圳市龙岗区餐饮服务单位复用餐饮具微生物污染情况有待进一步改善,市场监管部门及餐饮服务单位应采取针对性措施保障消费者堂食安全。Objective:To analyze the microbial contamination status of reusable tableware in Longgang district in 2023,and to provide scientific basis for regulatory authorities to carry out targeted preventive measures and for catering service units to improve on-site food safety.Method:According to the GB 14934—2016,the random sampling of reusable tableware in Longgang district was carried out,and microbial indicators such as coliform and Salmonella were detected.Result:In 2023,the overall qualified rate of reusable tableware in Longgang district was 88.1%,in which the microbial contamination of plates and bowls was more prominent,and in which the microbial contamination of snack bars and fast food restaurants was more obvious.Conclusion:The microbial contamination of tableware used by catering service units in Longgang district needs to be further improved,and market regulatory authorities and catering service units should take targeted measures to ensure the safety of consumers’on-site dining.
