摘　　要：本文简要介绍了甲壳素和壳聚糖的结构、理化性质及制备方法 ,重点对酶法生产甲壳素涉及的酶及甲壳素酶的基因工程进行了综述 ,最后对甲壳素及壳聚糖的应用与发展作以展望。The article briefly introduced the structure, property and preparation of chitin and chitosan, and summarized the chitinase and the gene engeering of the chitinase. In the last, pointed out the research development of chitin and chitosan.
