摘　　要：本文介绍了国内外甘蔗白酒的发展概况以及利用纯甘蔗原汁酿制优质甘蔗白酒的初步研究情况。以甘蔗清汁为原料酿造生产甘蔗酒,不仅可以得到一种安全、风味独特、浓郁纯正、品质优异、适合中国大众口味的白酒,而且将减少我国传统白酒生产的用粮,有助于我国的粮食安全,还可以提高甘蔗生产及加工的附加值,为甘蔗的深加工和生物质资源的综合利用开拓了新路,具有很高的经济效益和社会效益,有重大的现实意义。This paper illustrates the development status of sugarcane spirit home and abroad, the research an.d prospect of the production of high-quality sugarcane spirit from pure sugarcane juice. Sugarcane spirit not only can be a safe liquor with unique flavor, clear and original taste, high quality that meets the taste of Chinese public, but also can reduce the use of grain for traditional liquor production. It will contribute to the Chinese food security, the added value of sugarcane processing, and the comprehensive utilization of biomass resources. It is high economical and socially beneficial and of great practical significance.
