摘　　要：随着我国葡萄种植和加工产业的发展,逐年递增的、大量的葡萄皮渣由于带来严重的环境压力,已经成为葡萄加工业迫切需要解决的"瓶颈"问题。开展葡萄皮渣的综合利用,不仅可以获得良好的经济效益而且可有效减轻环保压力,获得巨大的社会效益。介绍了近年来葡萄皮渣综合利用开发的最新研究进展,包括葡萄皮渣中多酚、色素、葡萄籽油和蛋白质等多种功能性成分的开发和应用技术。With the rapid development of viticulture and grape processing industry at present,the increasing amount of grape skin residues has become the urgent bottleneck for grape processing industry because it might induce serious environmental problems.The comprehensive utilization of grape skin residues could not only produce favorable economic benfits but also settle such environmental bottleneck and achieve huge social benefits.In this paper,the latest research advance in the comprehensive utilization of grape skin residue and the development of many functional components in grape skin such as polyphenols,pigments,grape seed oil and protein etc.were introduced.
