摘　　要：聚葡萄糖是一种性能良好的水溶性膳食纤维,在医药、保健品、抗冻剂、焙烤食品等多个领域中有应用价值和发展潜力。介绍了聚葡萄糖的结构和性质,对聚葡萄糖的传统以及新型应用领域的研究进展进行了综述。Polydextrose is water soluble dietary fiber with good performance . And it has a high using value and development potential in multiple areas, such as medicine, health products, antifreezer, baking food. The structure and properties of polydextrose were described, and the research progress of the traditional and new ap plication areas of polydextrose was summarized in this article .
