摘 要:为预测鲜猪肉的货架期,将Baranyi模型与改良Lotka-Volterra结合,建立猪肉中单增李斯特菌(Listeria monocytogenes)与假单胞菌(Pseudomonads spp.)的竞争生长预测模型。由改良Lotka-Volterra方程计算稳态拮抗系数(α)。结果表明:在低温下单增李斯特菌对假单胞菌有一定抑制作用(α>0),且抑制效果在4℃最强;假单胞菌对单增李斯特菌无明显抑制作用。采用ComBase数据库中猪肉中单增李斯特菌的生长数据,计算模型的偏差因子和准确因子,对模型进行数学检验,4℃时偏差因子为1.207表明模型是失败-安全的,准确因子为1.362表明模型预测结果较准确。To predict the shelf-life of pork, Baranyi model and Lotka-Volterra model were used to establish a model for the competitive growth ofListeria monocytogenes and Pseudomonads spp. in pork. Interaction coefficients (a) were calculated from the steady-state equation of a modified Lotka-Volterra model. The results indicated that at lower temperature, L. monocytogenes could inhibit the growth ofPseudomonads spp. (a 〉 0), especially at 4 ℃, which represents the strongest inhibitory effect, while Pseudomonads spp. showed no significant inhibitory effect on L. monocytogenes. To validate the model, the L. monocytogenes growth data of in pork acquired from the ComBase database were used to calculate bias and accuracy factors. At 4℃, the bias factor was 1.207, indicating the model to be fail-safe, and the accuracy factor was 1.362, suggesting good prediction accuracy.
