摘  要:针对黄曲霉毒素M1在乳制品中的污染事件展开讨论,阐述了其理化性质及危害,介绍了现阶段常用的检测方法,包括薄层色谱法、免疫亲和层析净化高效液相色谱法、免疫层析净化荧光分光度法、双流向酶联免疫法,并提出了物理脱毒法,化学脱毒法和生物脱毒法等具体的防治措施,并简单介绍了筛选得到一株能够降解黄曲霉毒素M1的细菌菌株,降解率达到了89.6%,极具应用潜力。This paper discussed the aflatoxin M1 contamination in dairy products, expounded its physicochemical properties and harm, introduced the testing methods currently used, including the thin layer chromatography(TLC), immune affinity chromatography purification high-performance liquid chromatography(HPLC), immune chromatography purification fluorescence spectrophotometry, double flow enzyme-linked immunoassay, and put forward the physical, chemical and biological detoxification method to control this toxic, and introducesed a bacterial strain was isolated by our laboratory which could degrad aflatoxin M1, the degradation rate reached 89.6%, and had great potential for application.
