摘  要:玉米淀粉及黄浆发酵产小核菌粗多糖,探究其体外抗氧化活性,分别考察小核菌粗多糖对ABTS自由基、超氧阴离子自由基和亚硝基自由基的清除能力及其对亚油酸过氧化的抑制作用。小核菌粗多糖经Sephacryl S400-HR凝胶柱层析分离纯化,得到两个组分FRAC1和FRAC2,红外光谱分析表明FRAC1和FRAC2中存在C==O键及—OH基团。小核菌粗多糖对ABTS自由基有较好的清除效果;对超氧阴离子自由基和亚硝基自由基有一定的清除效果,清除能力随粗多糖的质量浓度增大而升高。试验表明,玉米淀粉及黄浆发酵获得的小核菌粗多糖具有一定的抗氧化活性。To evaluate the antioxidant activity of crude scleroglucan polysaccharides fermented in corn starch and corn soak, scavenging activities of scleroglucan polysaccharides to the ABTS, O2^-·, NO2^-· and inhibiting effect of linoleic acid were studied. Crude sclerogluean polysaccharides were separated and purified by Sephacryl S400-HR gel column chromatography, FRAC 1 and FRAC2 were obtained. The datas from FTIR spectrums showed that there were C=O and -OH in FRAC 1 and FRAC2. The results indicated that ABTS., and NO2^-· were scavenged by crudescleroglucan polysaccharides in a dose-dependent manner, which demonstrated antioxidant activities of crude sclerogluean polysaccharides fermented in com starch and corn soak.
