摘 要:目的:鉴定长街缢蛏原种并分析其特征性的挥发性物质。方法:通过使用电子鼻建立长街缢蛏的风味指纹模型,并对其准确性进行验证。通过顶空固相微萃取-气-质联用仪(HS-SPME-GC-MS)联合使用来检测新鲜、100℃和150℃条件下长街缢蛏的主要挥发性物质。结果:电子鼻建立的气味指纹模型能够准确判断样品是否属于长街缢蛏原种。电子鼻结果在新鲜、100℃和150℃条件下,长街缢蛏挥发性物质差异明显。利用SPMEGC-MS进一步分析3个温度下长街缢蛏的主要挥发性物质,其所含挥发性物质种类数分别为40,46,33,其中以烃类、醛类、醇类、酮类和呋喃类物质为主。结论:由电子鼻建立的指纹模型能准确鉴定长街缢蛏的原种,气-质联用仪能够确定长街缢蛏原种指纹性挥发性物质。Objective: To identify protospecies of Changjie Sinonovacula constricta and to analyze its volatile compounds. Methods: By using electronic nose to build odor fingerprint model of Changjie Sinonova culaconstricta, and verify the accuracy. Then analysis volatile compounds of Changjie Sinonova culaconstricta at different temperature by using HS- SPME-GC-MS. Results: odor fingerprint model be built by E-nose can identify the sample whether belong Changjie Sinonova culaconstricta. Odor of fresh Sinonova culaconstricta changed significantly while it were heated to 100 ℃ and 150 ℃. A total of 40, 46 and 33 volatile compounds in three kinds of samples were identified by HS-SPME-GC-MS. The main volatile compounds include hydrocarbon, ketones, aldehydes, alcohols, furan, and ester. Conclusion: Finger- print model can accurately identify the protospecies species of Changjie Sinonova culaconstricta, the GC-MS is able to determine the volatile substances of Changjie Sinonova culaconstricta.
