摘 要:高通量测序技术是一种测序通量高、检测速度快且错误率低的分子生物学技术,被广泛应用于微生物研究领域。近年来,随着白酒生产中微生物多样性研究的不断深入,高通量测序技术也被普遍应用于白酒微生物领域。该文对高通量测序技术特点和测序平台,以及其在白酒酿造工艺和不同香型白酒微生物中的应用进展进行综述,着重分析白酒微生物多样性及其动态变化,旨在为白酒微生物多样性研究与白酒发展提供参考。High-throughput sequencing technology is a molecular biology technology with high sequencing throughput,fast detection speed and low error rate,which were widely used in the field of microbial research.In recent years,with further development of the study on microbial diversity in Baijiu production,high-throughput sequencing technology has been widely used in the field of microbial diversity in Baijiu production.In this paper,the characteristics of high-throughput sequencing technology and sequencing platform,as well as its applications on Baijiu brewing technology and microbial diversity in different flavor Baijiu production were described.In addition,the microbial diversity and its dynamic changes were analyzed to provide reference for the study of microbial diversity and the development of Baijiu.
