摘　　要：该文主要进行了绍兴黄酒中的功能性微量组分的检测与研究,目前在古越龙山酒中的功能性成分酚类、低聚糖、肽类和功能性氨基酸方面取得了成果,将有助于人们更科学地认识黄酒的保健养生功能。Examination and research of the functional trace elements of rice wine are introduced in the article. Presently, there are lots of achievements about the study on the functional phenol, oligosaccharide, peptide and functional amino acid in Guyue Longshan wine that will help to understanding the health-protect function of rice wine.
