摘 要:目的了解北京市海淀区高校集体食堂食品安全工作现状,为今后加强高校食品安全管理工作,更好的防范食品安全事故的发生提供依据。方法对海淀区春季开学高校拉网检查工作中现场检查笔录中的问题进行汇总,统计海淀区高校集体食堂存在的问题,并提出对策。结果在高校集体食堂中,内外环境不洁、餐饮具消毒等环节存在问题相对较多。公办高校与民办高校存在的主要问题有所不同。结论应根据高校存在的主要问题,进行有针对性的培训,创立新的培训管理模式,加强重点环节的监督检查。Objective To investigate the current situation of food safety in college student canteen, to provide the basis of reinforcing the management of food safety work in colleges, and to prevent the occurrence of food poisoning. Method Collect the problems discovered during the confederative supervision work, and raise strategy. Result The main problems in college refectories are environmental unclean, sterilized tableware unclean, et al. There are obviously differences between public colleges and private colleges. Conclusion According to the problems discovered in college refectories, we should establish a specialized training system, reinforce the supervision on weak links of college food safety work.
