摘  要:本实验对利用黑曲霉发酵麦麸制备阿魏酸、肌醇和低聚糖进行了初步研究。结果表明 ,黑曲霉能部分释放麦麸膳食纤维上所束缚的阿魏酸 ,并将多糖和植酸分别水解成低聚糖和肌醇。其中固体培养法比液体培养法能释放出更多的阿魏酸、低聚糖和肌醇。不过 ,由于黑曲酶在释放这些物质的同时又将它们作为营养源 ,因此 ,利用黑曲霉直接发酵麦麸生产这三种物质是不经济的 ,而利用它们产生的酶来生产阿魏酸、肌醇和低聚糖可能是更好的选择。Aspergillus niger was used to ferment wheat bran for producing ferulic acid, inositol and monosaccharides. The results showed that the bound ferulic acid in wheat bran was partly released and inositol and monosaccharides were produced by the fermentation with Aspergillus niger . Compared with liquid fermentation, more ferulic acid, inositol and monosaccharides were produced. However, it is a cost method if wheat bran was directly fermented by Aspergillus niger as Aspergillus niger would deplete these substances during its growth. Alternatively, using the multi enzymes produced by Aspergillus niger seemed to be a sound choise.
